Another 21st birthday rolled around the river bend, this time for the lovely and endlessly referential Erik. Erik wanted strawberry frosting, and that’s what he got. Even if it’s the last thing I ever do. Hopefully it’s not, but if I die today, at least I fulfilled my promise. Happy birthday Erik, you beautiful beautiful man.

Large Bowl
Ingredients:
Two sticks (1 cup) Salted Butter
Strawberry Compote
Powdered Sugar
Vanilla Extract
Recipe:
Whip two sticks of room-temperature salted butter and a teaspoon of vanilla extract until the butter has lightened in color and fluffed up.
Add about ¼ cup of strawberry compote. The butter will not like this and you will end up with a brain-like consistency. Occasionally scrape the bowl down with a rubber spatula. For the next 30 minutes of your life, continually add in powdered sugar, beating on high with your electric mixer, until the frosting comes together.
That’s it! Butter, strawberry compote, sugar, beat, and frost your cake!
